- 2 tbsp ground flax seed (fresh ground is best, but pre-ground is fine)
- 1/4c non-dairy milk (almond, coconut, soy, etc)
- 1 1/2c whole wheat flour
- 1/4c cocoa
- 1 1/2tsp baking power
- 1/2 tsp baking soda
- salt
- 1/2c margarine
- 1c natural sugar
- 1tsp vanilla
- 2-3 mashed over-ripe (or frozen) bananas
- Mix flax seed with non-dairy milk, set aside for 10-15 mins
- Mix dry ingredients well
- Mix wet ingredients, including the flax seed mixture
- Mix wet and dry ingredients together
- Put into loaf pan, bake at 350 for 40 - 60 mins (until a toothpick comes out clean)
